It may be a surprise for some that this green look-alike of a cauliflower actually belongs to the cabbage family. Although broccoli is very nutritious, most people like kids detest this vegetable. The good news is that there is another way to prepare a broccoli dish that looks so appetizing for everyone – broccoli salad.
Broccoli salad only uses the florets of the vegetable along with simple ingredients like onion, nuts and bacon. For dressing, there is the mayonnaise, honey and vinegar. Just like other salads, you can experiment with your broccoli salad. You can add raisins, cheese, celery, peas and even sunflower seeds! This dish is also very handy; you can have this for picnic, at the buffet table, or potlucks.
In terms of maintaining the nutrients of broccoli, prepare broccoli salad is one of the best choices. Broccoli is rich in Vitamins C and K, soluble fiber and most of all, helps in fighting cancer like prostrate. However, its nutrients diminish as you cook it and with this reason, we often steam or boil our broccoli. For broccoli salad, it is advisable to mix raw broccoli but if you are not comfortable with it raw, then blanch it for less than 1 minute. Through blanching, you just don’t maintain its nutrients but also its rich green color.
